Tapping into the ‘do one thing well’ trend, Misojyu is a new concept café conceived by Edward Hames, who grew up in Tokyo before working in the creative industries in San Francisco and New York. Returning to Tokyo, Hames now focuses on creating perfectly crafted variations of Japan’s favourite comfort food.
