You may not think of pizza when you think of Japan, but there is a new growing trend for sensational sizzling pizza. Mandarin Oriental hotel executive chef Daniele Cason could be considered a different kind of shokunin; a pizza shokunin. Originally from Rome, Chef Daniele is taking the art of pizza-making to the next level.
Similar to the traditional Japanese fine dining art of kaiseki, Daniele's pizza toppings reflect not only each season but also each micro-season, of which there are 72 in Japan.
Global food blogger Aiste Miseviciute of @Luxeat says this ‘’his pizza is so crispy and delicious that the 8 seat counter on the 38th floor now serves Pizza omakase’’
Pizza making share many interesting sentiments prevalent through Japanese and Italian cooking. Just as recipes for authentically made Japanese washoku can be passed down through generations without alteration, Italian pizza aims to stay true to the original formula. Fresh produce and master craftmanship make Tokyo the new place to try a slice of the best. Journeying to Tokyo for a pizza? Just one mouthful and it all makes sense.
